Fish recipe

Despite the scaremongering there has been about the fishing industry recently, fish is good for you.

Just ensure that you use a good fishmonger and when buying farmed salmon, which is what I purchased here,  ensure that the meat looks and smells fresh, you will notice that organic salmon is always paler in colour.

This is a really simple recipe.

Buy a fillet of  Salmon (this piece was 1.5kg for 5 of us) place it on baking paper or foil and dot it with butter, chopped parsley, salt and pepper.

Bake uncovered in the oven.  This piece took about 25 minutes (remember it will keep cooking after you remove it from the oven).

Serve with Norwegian Cucumber Salad.

This is a speciality of my Mother’s.

1 cucumber, sliced as thinly as you can, I slice it with a cheese slicer.  Put in a bowl and sprinkle with a little salt.  The juice will soon start to come out of the cucumber.

After 1/2 hour. Pour the cucumber into a collander and pour out the juice.

Mix 2 TBSP malt vinegar with 1 TBSP sugar and stir into the cucumber. (increase the amount of vinegar mixture to taste)

Serve with the fish.
